Peanut butter…. We love you. You are truly one of the most pleasurable of life’s simple pleasures. Creamy, crunchy, au natural or sugary delightful, you always hit the spot.
And because we love you so much, we don’t want to limit you. You’re potential is far too great for us to clip your wings, so to speak. You deserve more than just sandwiches and cookies. And so, you shall have it. Here are a few recipes you can jump right into to kick off your new life as Peanut Butter: a food that deserves a seat at every table.
Rice Krispie Treats
…but with a twist! Marshmallow Rice Krispie treats? Pretty played out, don’t you think? Instead, melt down a cup of peanut butter and one package of butterscotch chips. Mix in the cereal, put it in a brownie tray and pop it in the fridge. Let it chill for an hour, cut them up and listen carefully. Hear that? That is the sound of your taste buds singing.
Smoothies
A chocolate protein smoothie is great. But a chocolate and peanut butter protein smoothie is better. Plus, more protein! Add it to a banana and coconut milk smoothie if you’re feeling a little nostalgic. Takes you right back to your favorite childhood snack… but for health!
Icing
Next time you whip up some chocolate cupcakes, skip the store bought icing. Instead, mix cream cheese, peanut butter and confectioners sugar. Forget measurements and just add this and that until the taste and texture is to your liking. It’s like a Reeses cup, but homemade!
Curry
Make your favorite red curry recipe as you always do, but when the sauce is cooking down, add ¾ cup of smooth peanut butter. This will give the sauce more dimension and a nutty, fatty flavor. It’s great for chicken, chickpeas or zucchini and mushrooms!
Asian Peanut Ginger Pasta
One of my dad’s signature dishes! All you need is a couple spoonfuls of peanut butter, ginger, and orange zest. Cook it down with some beef tips and snow peas. Add your favorite linguine and mix it all together and pop it in the fridge. This dish, best served cold, is the perfect pasta salad twist for your next shindig.
